Zutaten:

  • 100 g Sellerieknolle

  • 200 g Petersilienwurzel

  • 200 g Lauch

  • 1,5 EL Ghee

  • Olivenöl oder Butter

  • 100 ml Weiswein

  • 1 l Geflügelbrühe

  • 2 Bund Petersilie

  • 100 g saure Sahne

  • Salz

  • roter oder schwarzer Pfeffer aus der Mühle

  • 1-2 EL Zitronensaft

Fett erhitzen und das klein geschnittene Gemüse darin andünsten. Vom Lauch die grünen Lauchteile beiseite legen und für ein anderes Gericht verwenden. Pfeffer, Salz und den Wein zugeben und einköchen lassen, eine Prise Thymian, die Geflügelbrühe zugeben und alles weitere 15 min gar kochen.

Inzwischen die Petersilie waschen, grob hacken und mit der sauren Sahne in einem Mixer pürieren. Die Suppe ebenfalls mit einem Zauberstab pürieren und mit Pfeffer, Salz und etwas Zitronensaft abschmecken. Mit der Petersiliencreme servieren. Wenn man keine saure Sahne verwenden will, die Suppe im Teller mit fein gehackter Petersilie garnieren.
